When I turned vegan from vegetarian, a major challenge for me was learning to make my favourite dairy and egg-based dishes, vegan.
My friend and colleague, Jane Easton, a vegan of many years, taught me a lot about cooking with tofu and together we have developed many ways it can be used to minic egg in cooking.
Learning to cook scrambled tofu for example, was an absolute triumph and it remains one of my favourite breakfasts/brunches!
Conquering quiche was a whole different ball game, one which took taken a bit of practice and experimentation. I now think I’ve 'cracked' the ultimate vegan version. It uses a combination of silken tofu and Tofutti Creamy Smooth for the filling encasing lightly cooked veg, spooned into a pastry case made using flour and mashed potatoes!
We also make a delicious vegan 'eggs' benedict, making a hollandaise sauce also using silken tofu. Other ideas include tofu-egg mayo and pancakes – which continue to please the pallets of hundreds of people at our live cookery demonstrations throughout the UK.
